Bandar's Spicy Indian Chicken Salad

Serves 3-4 people


1 ¼ cup Chicken Broth
1 lb skinless boneless chicken breast
1/3 cup mayonnaise
1/3 cup plain or non-fat yogurt
4  teaspoons of Bandar Spicy Mango Chili Sauce or to taste
3/4 table spoon lime juice
1/2 teaspoon honey
1/4 teaspoon grated ginger
1/4 teaspoon black pepper
3/4 chopped red onion
3/4 cup seedless grapes, halved

Bring 4 cups water to a simmer with chicken broth in a 2 – 3 quart saucepan. Add chicken and simmer uncovered for 6 minutes. Remove pan from heat and cover, then let stand until chicken is cooked through for about 15 minutes. Transfer chicken to a plate and cool 10 minutes. Chop into 1/2-inch pieces.


While chicken is cooling, whisk together mayonnaise, yogurt, Bandar Spicy Mango Chili Sauce, lime juice, honey, ginger, and pepper in a large bowl. Add chicken, onion, grapes, and  stir gently to combine.


Serve with your favorite sandwich bread and thinly sliced cucumbers
